Salt and Pepper Chicken Wings

This Chinese salted pepper chicken wings recipe is simple, juicy, and delicious! Like a lot of the recipes I share, food doesn’t need to have a complicated recipe in order to be good! 

If you haven’t heard about this flavor, don’t worry because you’re going to now and you’re going to LOVE this recipe. Chinese Salt and pepper chicken wings aren’t like your typical American-style wings – it’s lightly breaded, super crunchy, and simply tossed in salt, pepper, and a few sliced jalapenos for some added heat.

Crispy and Crunchy Chicken Wing Batter

In this step by step tutorial, you will learn how to make cha chan tang chicken wings with deep fried crispy skin. My father in law owned a restaurant for 30 years and he taught me how to achieve that crispy and crunchy breading for the chicken wings. 

So next Sunday, when you’re watching the game, feel free to serve a piping hot plate of these wings to enjoy with friends and family. Equipment

Korean Wok for Deep Frying

Ingredients

  • 12 chicken wings (drumettes and middle)
  • ¼ cup of flour
  • ⅓ tsp baking powder
  • 2 tbsp potato starch (cornstarch is an acceptable alternative)
  • 1 tsp salt, split.
  • ½ tsp pepper
  • 1 egg
  • 1 ½ cup of vegetable oil
  • 4 cloves of garlic, minced
  • ⅓ cup of Jalapenos, sliced

Instructions

  1. In a bowl, combine flour, baking powder, and potato starch. Mix well.
  2. Marinate wings with ½ tsp of salt and ½ tsp pepper. Reserve the remaining ½ tsp salt for later.
  3. Crack an egg in a separate bowl and whisk. Dip wings in egg mixture and then coat in flour mixture, making sure wings are coated evenly.

4. Heat vegetable oil in a deep wok or pot on medium heat. After a few minutes have passed, check to see if the oil is ready by sticking the chopstick into the oil. If there are bubbles forming around the chopstick, then the oil is ready. 

5. Once oil is ready, make sure to shake off excess flour before gently placing wings into the frying oil, one at a time.

6. Fry chicken wings for about 4 mins on each side, until golden brown, for about 7-8 minutes, depending on the size. 

7. Once wings are done frying, place wings on the baking rack to filter out excess oil.

8. Reserve 2 tablespoons of remaining frying oil from the wok. Working quickly, fry garlic and jalapenos. Toss in chicken wings and remaining ½ tsp of salt. Gently lift the wok and toss chicken wings and ingredients until everything is coated evenly. 

9. Plate wings and season to your taste. Serve.

  1. I was so excited to eat them, I pulled them out a little early and had to go back to fry them again. Note to self, stick to exact cooking times! Other than that, this was a super easy recipe to follow and turned out tasty. I swapped out jalapeños for some red chili oil and it was just the right amount of heat for me.
