Pasta Carbonara Recipe with Bacon

I’m always looking for easy and satisfying dishes and this one fits the bill. If you never had this before, let me paint you a picture. Imagine a soft spaghetti noodles in a creamy egg sauce with bites of crunchy bits of bacon folded in between every bite. And let me tell you one more thing, it can be made in 20 minutes for a quick lunch. What? Yup, I absolutely love making this dish because it only requires a few ingredients that I keep in my fridge and when I have no plans for lunch, this is the perfect go to dish and it is insanely fast to make. 

How can you make pasta carbonara that fast?

The reason why I can whip up this dish so fast is because you don’t really need to cook the cream sauce. After you add the ingredients in the bowl, you rely on the indirect heat of the pasta to warm the house and cook it. This is how we keep the “egg sauce” silky and without overcooking it. 

What do you need?

The beauty of this dish is that you can have just a few ingredients. Eggs, bacon, parmesan, spaghetti, and some salt and pepper. Living in quarantine, I’ve learned to be resourceful and tried to make dishes with fewer ingredients and flexibility. For parmesan, I found that buying the block ungrated actually last a really long time in your fridge. Fun fact, if you need a staple to make italian dishes once in a awhile, keep a block of parmesan in the fridge, it last way longer than pre grated parmesan and taste so much better freshly grated. 

Pasta Carbonara Recipe with Bacon

Ingredients

  • 1 cup of parmesan cheese
  • 5 slices of bacon
  • 2 dime size spaghetti
  • Salt and pepper to taste
  • 2 eggs

Instructions

  1. Bring a pot to a boil and add spaghetti in. Cook for 11 minutes or until pasta is soft. 
  2. While pasta is cooking, in a mixing bowl crack and whisk 2 eggs. Whisk eggs until little or no egg whites. Grate 1 cup of parmesan cheese and add to mixing bowl
  3. Use a frying pan and pan fry 5 pieces of bacon until bacon is crispy. Use scissors to cut into small pieces.
  4. Once pasta is cooked, drain pasta and add to mixing bowl right away and mix with egg mixture. Add in crispy bacon to mixing bowl. Use tongs to mix everything together
  5. Add salt and pepper to taste and serve!
