After indulging on Thanksgiving turkey and all its deliciousness, you would think that would be the end of such a nice meal. I’m telling you it doesn’t have to be over. A perfect light way of enjoying post thanksgiving turkey is a simple and light Turkey Congee. In Chinese households, we love using the leftover turkey to make a yummy turkey porridge that has the fragrance of turkey combined with the lightness of congee. With an instant pot, this meal is even easier, and with minimal ingredients you can enjoy this post thanksgiving porridge the morning after!
Instant Pot
While I love making congee in a pot, sometimes you just need to fast-track it a bit! Which is why I LOVE using my instant pot. It’s fast and it’s low-maintenance! I can cook the congee quickly without having to constantly stir the congee every 15 minutes to make sure the rice doesn’t burn. I can pretty much set it and forget it.
Turkey
To make this delicious congee, you’ll just need leftover turkey. If you want to make a turkey congee, you can buy a 2 lb turkey leg and lightly season it with salt and pepper to make this congee.

Equipment
Time: 45 Minutes
Ingredients
- 2 lb turkey or leftover turkey
- 1 cup of jasmine rice
- 10 cups of water
Instructions
- Rinse rice in cold water 3 times and drain.
- If you want to make a turkey congee, season raw turkey with salt and pepper.
- Add in rice and turkey to the instant pot. Add in 10 cups of water and close the lid.
- Set the instant pot to porridge setting, high pressure, and to cook for 30 minutes.
- Towards the end of the 30 mins, release the steam
- Open the lid. The congee will still be watery and this is ok. Change setting to saute setting on instant pot and continue cooking congee until desired thickness.
- Add in salt to taste. Garnish with green onion and serve.
