Japanese Chicken Curry Recipe

I’ve been cooking for awhile now but even with all the new dishes that I’ve made over the years, one of my husbands favorite dishes is one that I made since college, Curry Chicken. I know people might think as food bloggers, we make everything from scratch and everything is gourmet. But the truth is, I’m a normal person that gets super tired and lazy sometimes. Nothing wrong with that at all! Sometimes as moms, we just need easy wins. So when I don’t feel like making a huge elaborate meal but I also want something that’s comforting, my go-to is curry chicken. Why? Well, spicy curry is just so saucy and hearty, combined with tender and soft chicken thighs, crunchy vegetables, this one pot meal is super easy to make, in just under 30 minutes! This is my go to dish when I just don’t want to think about what to make but I know it will be super satisfying.  

What is amazing about this dish is that you only need 3 ingredients! I like to stock up on curry packets for those rainy days. I buy a variety of hot, medium, and mild depending on who I’m cooking for! My favorite brand is the golden curry packet for this dish. I’ve been using this brand for 17 years and I love it!

Protein

Personally in my experience I love using boneless chicken thighs. The reason is because I like my chicken moist and not dry. I feel that chicken breast can dry out while cooking with curry, and chicken thighs are more forgiving. Boneless also makes the chicken easier to cook and less likely to be under-cooked, plus no bones means no hassle for the kiddies! 

Curry

Again, Golden Curry is my absolute favorite! I haven’t even tried another curry packet because this one is so good. Why find something else when you already have the best one? If you like it spicy, pick the hot spicy packet from Golden Curry, you won’t be sorry!

Ingredients

  • 1 pack Golden Curry
  • 1 pack or 6 boneless chicken thighs
  • 1 bunch of celery
  • 1 jalapeno (optional)
  • Alternative vegetables include potatoes, carrots, and onions.

Instructions

  1. Add 2 cups of water to a pot and heat on medium. Once water boils, add in curry packet and stir until sauce is blended with water.
  2. While the sauce is cooking, prepare jalapeno, celery, and slice chicken thighs in ½ inch increments. 
  3. Once the sauce is ready, add vegetables and chicken to the pot. Close the lid and cook for 10 minutes. Stir curry occasionally to prevent burning at the bottom of the pot.
  4. After 10 minutes, stir curry and check on the chicken. Once chicken is no longer pink it is ready to be served. 
  5. Serve curry over rice and enjoy!
