Instant Pot Chicken Congee

When I’m in a bind for something to make for lunch, I will always end up making chicken congee “鸡粥” because it hits on all 3 fronts: quick, easy, and comforting. Connor in particular loves chicken congee because he loves anything that’s soupy, and just like his mama, he LOVES chicken in any form. This dish is particularly perfect on those cold rainy days, when you just want something to keep you warm and put you into a nice food coma. Instant Pot

While I love making congee in a pot, sometimes you just need to fast-track it a bit! Which is why I LOVE using my instant pot. It’s fast and it’s low-maintenance! I can cook the congee quickly without having to constantly stir the congee every 15 minutes to make sure the rice doesn’t burn. I can pretty much set it and forget it. 

Chicken

To make this delicious congee, you’ll  just need one pack of chicken drumsticks. I like using drumsticks because when the meat is attached to the bone, the meat is a bit more tender and less likely to be dry. Especially when you’re cooking a protein by boiling it like in a congee, it can tend to get overcooked, which is why drumsticks are ideal to make sure the meat retain its moisture. 

Equipment

  1. Instant Pot

Time: 45 Minutes

Ingredients

  • 1 pack of chicken drumsticks (6 drumsticks)
  • 1 cup of jasmine rice
  • 10 cups of water
  • 2 tsp of salt, to taste
  • 1 tsp ginger, sliced
  • 1 sprig of green onion (garnish)
  • ½ tbsp dried scallop (optional)

Instructions

  1. Slice ginger and bruise to release the flavor. Rinse chicken drumsticks in cold water.
  2. Rinse rice in cold water 3 times and drain. 
  3. Add in rice, ginger, and drumsticks to the instant pot. Add in 10 cups of water and close the lid.
  4. Set the instant pot to porridge setting, high pressure, and to cook for 30 minutes. 
  5. Towards the end of the 30 mins, release the steam 
  6. Open the lid. The congee will still be watery and this is ok. Change setting to saute setting on instant pot and continue cooking congee until desired thickness. 
  7. Add in 2 tsp of salt to taste. Garnish with green onion and serve.
