Chicken Lo Mein

Chicken lo mein 鸡撈麵 is one of the easiest Chinese dishes you can make at home. You really can’t mess it up. I always used to make this dish in high school when I didn’t know how to cook, but I wanted a taste of some Asian noodles. You can adjust the sauce to your liking and mix to blend. Adding pan fried chicken and some vegetables is all you need to complete a healthy protein-packed saucy dish. 

Lo mein 撈麵 means “stirred noodles” in Chinese. With some oyster sauce, soy sauce, and sesame oil, this dish is so deliciously simple and slurp worthy. In Cantonese cuisine, it is served with egg noodles with a soup on the side to dip the noodles in. If you don’t have egg noodles, you can make this dish with spaghetti noodles and it tastes just as good. I hope you enjoy making this dish at home for a simple meal with the family!

Notes: Test to see if the chicken is cooked by using tongs to press down on the chicken to see if it’s solid and bounces back. 

Instructions

  1. Rinse the chicken with cold water and pat down dry with paper towels. Marinate chicken with ½ tbsp of soy sauce and ginger. 
  2. Boil water on high heat. Once water is boiling, add in spaghetti and cook for 10-11 minutes. When spaghetti is done, drain in a colander. 
  3. In a bowl, combine oyster sauce, 2 tbsp soy sauce, and sesame oil. Heat a pan up on medium heat. Once the pan is warm, add in 1 tsp of oil and coat the pan. Once oil is translucent, add in chicken thighs and cook for 7-8 minutes. 
  4. When chicken is done, cut chicken into 1-inch pieces. 
  5. Mix spaghetti with sauce and add in chicken to blend well. Serve right away and garnish with green onions.
